Sicilian Fleur de Sel: The Finishing Salt Chefs Love

Some ingredients do their work quietly in the pot. Others are the last thing you add, and the first thing your guests notice. SoSalt Sicilian Fleur de Sel is the second kind: a delicate, hand-harvested finishing salt from the coast of Trapani, Sicily, now available at Wholesale Italian Food.

What is fleur de sel?

Fleur de sel means "flower of salt." It's the thin, delicate layer of crystals that forms on the surface of the salt pans as seawater evaporates. Because it has to be skimmed off carefully by hand, only a small part of each harvest becomes fleur de sel, which is why chefs treat it as a premium finishing salt rather than an everyday cooking salt.

SoSalt's Sicilian version comes from the historic salt pans of Trapani. It's collected by hand and left untreated and unrefined, so it keeps its natural mineral character and a light, clean texture.

Fleur de sel vs. regular salt

Table salt is refined and often contains anti-caking agents. Its job is to dissolve and season. Fleur de sel is different: its fine, delicate crystals sit on top of food and add a clean burst of salinity and a gentle crunch in the last bite. Use your regular fine sea salt for cooking, and save fleur de sel for the finish.

How to use Sicilian fleur de sel

  1. Steak and grilled meats: slice, then sprinkle a pinch over the meat just before serving.
  2. Seafood: finish grilled fish, crudo, scallops or shrimp with a few crystals and a drizzle of olive oil.
  3. Vegetables: roasted potatoes, grilled zucchini or ripe summer tomatoes come alive with a light pinch.
  4. Focaccia and bread: sprinkle on top of focaccia before baking, or on bread with good olive oil.
  5. Cheese and antipasti: add it to your cheese boards, burrata or charcuterie spreads.
  6. Sweets: a few crystals on chocolate, caramel or cookies balance the sweetness.

Tip: add it at the very end, after cooking, so the crystals keep their texture.
